The full tang blade provides exceptional balance in one&';s hand providing a steady and sure cut while carving large poultry shanks and other tough cuts of meat. The heat-treated beech wood handle provides water resistance for easy maintenance. Bevel Angle 15Adeg each side Rockwell Hardness between 57 and 59 HRC.
